There are +5000 restaurants in the Ottawa/Gatineau area and of those, only 1000 locations are currently meeting the NFPA 96 (the Standard for Ventilation Control and Fire Protection of Commercial Cooking Operations) requirements.
Good health and safety practices state that restaurants should to clean or replace exhaust filters a minimum of 12 times a year (once a month) however, many don’t.
